The Smith is one of Melbourne’s leading gastro pubs in the funky inner suburb of Prahran. A restored and renovated former beer hall, The Smith presented design challenges that required careful consideration and solutions, in order to provide the operators with a functional kitchen and bar, whilst maximising seating capacity.
Shoehorning the cooking equipment between structural columns and altering some internal walls enabled the inclusion of heavy-duty cooking equipment. Working closely with the team of chef/owner, builder and kitchen contractor was particularly rewarding, not just for the satisfaction of seeing an efficient kitchen delivered on time and budget, but also for the opportunity to taste Michael Lambie’s signature sticky pork belly with seared scallops and chilli dressing!
